POTATO POTLUCK CASSEROLE - # 306


  • 8-10 medium potatoes
  • 3 oz. low-fat cream cheese
  • 8 oz. low-fat sour cream
  • 1/2 c. margarine
  • 1 clove garlic, pressed
  • 1/4 c. chopped chives
  • 2 Tbsp. salt (Optional)
  • Paprika
  • Cook potatoes until tender and mash.
  • Beat cream chees until smooth
  • Add potatoes and mix well.
  • Add remaining ingredients except Paprika.
  • Put in a buttered casserole dish.
  • Cover and refrigerate overnight (this is important).
  • Removed casserole from refrigerator 15 minutes before baking
  • Sprinkle potatoes with paprika
  • Bake in 350 degree oven for 30 minutes
