Microwave Peanut Brittle


  • 1 c sugar
  • 1/2 c white corn syrup
  • 1 c raw peanuts
  • 1/8 tsp salt
  • 1 tsp butter
  • 1 tsp vanilla
  • 1 tsp baking soda
  • In a 1 1/2 quart casserole, stir together the sugar, syrup, raw peanuts, and salt. mixing well. Microwave on high 6 to 9 minutes until light brown.
  • Add butter and vanilla and stir well.
  • Microwave on high 1 - 2 minutes more.
  • Peanuts will be light brown and syrup will be very hot.
  • Add baking soda and gently stir until light and foamy.
  • Pour into a buttered cookie sheet.
  • Let cool 1 hour.
  • Break into small pieces.
