Microwave Peanut Brittle
1 c sugar
1/2 c white corn syrup
1 c raw peanuts
1/8 tsp salt
1 tsp butter
1 tsp vanilla
1 tsp baking soda
In a 1 1/2 quart casserole, stir together the sugar, syrup, raw peanuts, and salt. mixing well. Microwave on high 6 to 9 minutes until light brown.
Add butter and vanilla and stir well.
Microwave on high 1 - 2 minutes more.
Peanuts will be light brown and syrup will be very hot.
Add baking soda and gently stir until light and foamy.
Pour into a buttered cookie sheet.
Let cool 1 hour.
Break into small pieces.
