BANANA OAT BARS - # 304

  • 1 1/3 c. all-purpose flour
  • 1 c. quick-cooking rolled oats.
  • 1/2 c. sugar
  • 2 tsp. baking powder
  • 1 tsp. ground cinnamon
  • 1/2 tsp. baking soda
  • 1/2 c. raisins
  • 1 c. mashed ripe bananas (about 2)
  • 1/4 c. skim milk
  • 2 large egg whites
  • 1 tsp. vanilla
  • Preheat oven to 350
  • Sitr together flour, oats, sugar, baking powder, cinnamon, baking soda and raisins.
  • Add bananas, milk, egg whites and vanilla
  • Beat until lightly mixed
  • Spread batter in a nonstick or lightly oiled 9 x 13 baking pan
  • Bake 35 to 40 minutes until golden brown and center springs back when lightly touched
  • Cut into 2 inch squares
  • Sever warm or cool
  • Makes 24 bars
  • This is a healthy, lowfat after-school snack.
