BANANA OAT BARS - # 304
1 1/3 c. all-purpose flour
1 c. quick-cooking rolled oats.
1/2 c. sugar
2 tsp. baking powder
1 tsp. ground cinnamon
1/2 tsp. baking soda
1/2 c. raisins
1 c. mashed ripe bananas (about 2)
1/4 c. skim milk
2 large egg whites
1 tsp. vanilla
Preheat oven to 350
Sitr together flour, oats, sugar, baking powder, cinnamon, baking soda and raisins.
Add bananas, milk, egg whites and vanilla
Beat until lightly mixed
Spread batter in a nonstick or lightly oiled 9 x 13 baking pan
Bake 35 to 40 minutes until golden brown and center springs back when lightly touched
Cut into 2 inch squares
Sever warm or cool
Makes 24 bars
This is a healthy, lowfat after-school snack.
