CAKES WHITE CHOCOLATE EXPRESSO CHEESECAKE 1 baked pie crust (10 inches) 3 - 8 ozs pkg of Cream Cheese (softened) 2 Eggs 10 to 12 ozs of while chocolate chips (melted) 3 tsp of expresso coffee (cool) TOPPING 1 cup Whipping Cream 2 Tbsp Sugar 1 Tbsp of grated Chocolate or Chocolate Curls 16 Strawberries (optional) +++++++++++++ In large bowl beat cream cheese until light and fluffy. Add eggs, blend well Add white chocolate, misture may look a little lumpy Add expresso to cream cheese mixture and blend well Pour into pie crust Bake at 450 degrees for 5 minutes Reduce heat to 350 degrees Bake for about 30 minutes or until center is just set Cool completely and refrigerate Serve whip cream with sugar until stiff peaks form Sppon or pipe whipped cream on top of cheesecake Garnish with grated chocolate or curls Serve with berries This is a beautiful dessert. Looks impressive when you serve for company
