PINEAPPLE PUDDING CAKE

  • 1 14 oz. can crushed Pineapple
  • 1 yellow or white cake mix
  • 1 cup Pineapple juice
  • 2 Eggs
  • 1/2 C. Cooking Oil
  • 3/4 C. Coconut
  • 1/2 C. melted Oleo
  • Drain the pineapple dry- make about 1 cup. Mix the cake with the juice, eggs, and oil. Beat well. Grease 9x13 pan. Mix cocnut, nuts and oleo-spread in bottom of pan. Pour batter over the mixture. Spirnkle and drained pineapple over mixture and spread with fork over top of cake.
  • Bake at 350 about 45 minutes
