CAKES PINA COLADA CAKE - #305 1 box pineapple cake mix 1 - 4 servings size coconut instant pudding mix 4 large eggs 3/4 c. flaked coconut 1/2 c. water 1/3 c. dark rum 1/4 c. cooking oil Preheat oven to 350 degrees. Butter and flour two 9-inch round pans. Blend ingredients together in a large mixxing bowl. Beat at medium speed until light. Pour into prepared pans. Bake 25-30 minutes. Cool before frosting FROSTING: 1 - 8 oz. can crushed pineapple, drained 1 - 4 serving size vanilla instant pudding mix. 5 oz. pina colada cocktail mix 1/2 pint whipping cream 1/4 c. flaked coconut Cream pineapple, pudding mix and pina colada mix. Whip cream and fold into mixture Add coconut Chill Frost cake Sprinkle with additional coconut.
