CAKES

PINA COLADA CAKE - #305

  • 1 box pineapple cake mix
  • 1 - 4 servings size coconut instant pudding mix
  • 4 large eggs
  • 3/4 c. flaked coconut
  • 1/2 c. water
  • 1/3 c. dark rum
  • 1/4 c. cooking oil
  • Preheat oven to 350 degrees. Butter and flour two 9-inch round pans.
  • Blend ingredients together in a large mixxing bowl.
  • Beat at medium speed until light.
  • Pour into prepared pans.
  • Bake 25-30 minutes.
  • Cool before frosting
  • FROSTING:
  • 1 - 8 oz. can crushed pineapple, drained
  • 1 - 4 serving size vanilla instant pudding mix.
  • 5 oz. pina colada cocktail mix
  • 1/2 pint whipping cream
  • 1/4 c. flaked coconut
  • Cream pineapple, pudding mix and pina colada mix.
  • Whip cream and fold into mixture
  • Add coconut
  • Chill
  • Frost cake
  • Sprinkle with additional coconut.
