CAKES

HUMMINGBIRD CAKE

  • 3 C. flour
  • 2 C. sugar
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 3 eggs, beaten
  • 1 C. vegetable oil
  • 1 1/2 tsp vanilla
  • 1 can (8oz.) crushed
  • pineapple, undrained
  • 2 C. chopped bananas
  • 1 C. chopped pecans
  • Combine flour, sugar, baking soda, salt and cinnamon;
  • add eggs and oil, stirring until moistened.
  • Do not beat.
  • Stir in vanilla, pineapple, pecans, and bananas.
  • Spoon batter into 3 greased and floured 9-inch pans.
  • bake at 350 for 25 to 30 minutes.
  • Cool 10 minutes.

  • 1 pkg. (8oz) cream cheese softened
  • 1/2 C. butter or oleo, softened
  • 1 pkg. (16oz) powdered sugar, sifted
  • 1 tsp. vanilla
  • Cream cheese and butter until smooth;
  • add powdered sugar and vanilla, beat until light and fluffy.
  • Frost sides and top of cake.
