CAKES
HUMMINGBIRD CAKE
- 3 C. flour
- 2 C. sugar
- 1 tsp. baking soda
- 1 tsp. salt
- 1 tsp. cinnamon
- 3 eggs, beaten
- 1 C. vegetable oil
- 1 1/2 tsp vanilla
- 1 can (8oz.) crushed
- pineapple, undrained
- 2 C. chopped bananas
- 1 C. chopped pecans
- Combine flour, sugar, baking soda, salt and cinnamon;
- add eggs and oil, stirring until moistened.
- Do not beat.
- Stir in vanilla, pineapple, pecans, and bananas.
- Spoon batter into 3 greased and floured 9-inch pans.
- bake at 350 for 25 to 30 minutes.
- Cool 10 minutes.
- 1 pkg. (8oz) cream cheese softened
- 1/2 C. butter or oleo, softened
- 1 pkg. (16oz) powdered sugar, sifted
- 1 tsp. vanilla
- Cream cheese and butter until smooth;
- add powdered sugar and vanilla, beat until light and fluffy.
- Frost sides and top of cake.
