Walnut Chicken Nuggets

  • 1 1/2 lbs boneless, skinless chicken breasts, cut into bite-size pieces
  • 1 Tbsp. dry sherry
  • 2 - 2 1/2 cups walnuts, finely chopped
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 2 egg whites
  • 1/4 cup cornstarch
  • vegetable oil for frying
  • Combine chicken and sherry in a small bowl; toss gently and set aside
  • Combine walnuts, salt and pepper in a shallow dish; set aside
  • Beat egg whites with an electric mixer until foamy. Add cornstarch and beat until stiff peaks form.
  • In batches, press chicken pieces between paper towels to remove moisture.
  • Dip chicken in egg white mixture
  • Roll in walnuts.
  • Heat oil to 350 degree
  • Fry chicken pieces until golden.
  • Drain on paper towels.
  • Serve with honey-mustard or your favorite dipping sauce.
