Walnut Chicken Nuggets
1 1/2 lbs boneless, skinless chicken breasts, cut into bite-size pieces
1 Tbsp. dry sherry
2 - 2 1/2 cups walnuts, finely chopped
1 tsp. salt
1/8 tsp. pepper
2 egg whites
1/4 cup cornstarch
vegetable oil for frying
Combine chicken and sherry in a small bowl; toss gently and set aside
Combine walnuts, salt and pepper in a shallow dish; set aside
Beat egg whites with an electric mixer until foamy. Add cornstarch and beat until stiff peaks form.
In batches, press chicken pieces between paper towels to remove moisture.
Dip chicken in egg white mixture
Roll in walnuts.
Heat oil to 350 degree
Fry chicken pieces until golden.
Drain on paper towels.
Serve with honey-mustard or your favorite dipping sauce.
